COURSE DESCRIPTION: This course is designed to provide a broad overview of the science of human nutrition. Nutrition is an applied life science that integrates scientific principles across a variety of disciplines and in society. Using applied problem solving and data analysis, students will explore nutritional balance and disease prevention in the context of the levels of organization, metabolism and homeostasis, genetics and evolution, and ecological interactions.

What are 5 ways to maximize your food dollars?

  1. Choose foods that are going to meet all the food groups.
  2. Look for sales on things that last longer such as; rice, water, canned, and frozen.
  3. Use the stores' app, coupons, and specials, store cards.
  4. Don’t shop for name brand, get the food for the store brand and for cheaper.
  5. Make a list of food items and check out store ads to see what’s on sale and what’s priced well and work with that for meals and snacks.

Fresh fruits and vegetables do spoil more quickly than processed foods. What are 5 ways to might combat this, so that you can include fresh foods while minimizing waste?

  1. Refrigerate them to help them last longer.
  2. Freeze bananas! I do that all the time and use bananas in other recipes too.
  3. Buy in smaller quantities that you know you will finish.
  4. Make sure you’re buying what you need. Don’t buy tons of things you don’t need.
  5. Plan meals that will incorporate them and eat the leftovers or make it with something else.

Critique the $10 Challenge video.

I really enjoyed the $10 Challenge video, it was fun and very interesting to see what the two bought. I have a friend that buys tons of junk food when at the grocery store! My opinion on both sides neither created a meal. One got a bunch of junk food and the other got a bunch of fruits and vegetables. Yes, it was great to see how much you can buy with $10 but there was no protein. They had snacks or sides to main meals.

  1. You can compare by calories and nutrients.
  2. You can also compare by how they fill MyPlate categories.

Learning Outcomes & Answers for chosen signature assignment


I learned that there are so many choices when buyingfood and it is very easy to convert to unhealthy food. I also learned that you can buy tons of fruits and vegetables for a great price and do so much with them. The reason, why I chose this assignment,is because it was hands-onand I got to go out and do it for myself. I loveexperiencing things for myself.

One class I really enjoyed that I took before this class is Zumba! My teacher for that class would have us all come up with a goal for a week to focus on our health. One of my goals for a week was to have more vegetables in my meals. At the end of the week we would reflect on that goal and see how we did and felt. I loved that part of the class and it really ties well into this class.

This assignment was so fun and interesting to learn more about buying healthier foods. I loved going out and trying it out for myself first hand. When doing this assignment I started to think of so muchI could buy and what are healthy choices. I when into the store with the idea of what I wanted to buy and completely changed my mind. I was a lot harder than I expected. I was also, mind blown at the end when weighing it all. I thought all my items would weigh much more. It also felt wonderful to give back and do an act of service. The best feeling is helping others.
