Just something I would like to discuss briefly, during Stardust Crusaders (DIO's World) both Star Platinum and The World displayed the ability of flight on multiple occasions (check the links below.) I was thinking that perhaps this ability would be something noteworthy to add on both of their pages.
I'll propose this for the time being.
Aerial Movement: An ability which was most likely discovered after Jotaro viewed DIO to be flying in unison with The World, this ability also allows Jotaro to levitate in place, perfrom incredible leaps into the air and most importantly fly. Since Jotaro is still able to use Star Platinum offensively while performing these movements, it covers for Star Platinum's short distance range.
Demonstrations of Flight (keep in mind that since The World and Star Platinum are the same type of stand, they should also have a compareable level of flight)

Could it be that GER could be resetting gravity to zero or something along that lines, hence them just standing in the air?

It's common, but Araki's use of it as a climactic phenomenon gives it a particular flavour. In a series full of Stands with phenomenal abilities, Araki's nearly always made it a point to make the Users still inherently human, with all the mental and physical weaknesses associated with it. It's not like DB where everyone flies to the point the nimbus is useless. However, making the User float is a pretty big deal.

I mean, I think you’re overhyping this a bit. It’s just a simple tool to make the character look cooler and more powerful. It’s really not that complicated nor significant.

Sufficiently powerful stands like GER allows the user to levitate. Power stands like SP or TW could probably do the same.

But in all seriousness, that scene happens when Dio used The World to stop time. Look at the knives that DIO throws throughout his fight against Jotaro or when DIO flys to get the steamroller. Stopping time allows for less physics boundaries.
if you look "CLOSELY" time stop ended for Dio after he donutted Kakyoin which means when time stop ended you can see Dio clearly floating as he saids "Joseph... You'renext."
and just to prove im right i found a few plot holes where Jotaro and Dio change their flight direction in "mid air"

I mean, yeah alot of their flying was stand leaps, but the floating that DIO did when he stopped time as he was chasing Jotaro, he stood there with an aura, so I kind of believe that some stands like Star Platinum, The World and Golden Experience Requiem have a flight move.

When time is stopped gravity is somewhat reduced, so when Dio was chasing Jotaro they where using their stands in the reduced gravity to knock themselves building from building to gain speed. That is my first theory. But to explain the part where Dio and Jotaro where straight up floating in the air while barraging each other with time active they probably just have extra power. Its not impossible other stands possess abilities like this *C-moon*
Or similiar to GER they posses great power and just have the ability to fly and just need to keep training
